Chicken with Rotini, Sun Dried Tomatoes, and Bell Peppers (Instapot Version)

Quick to prepare meal that makes use of an Instant Pot pressure cooker. You could make this without the pressure cooker, tho, by baking the chicken in an oven and preparing the pasta on the stove. These instructions do not cover that preparation method.

Equipment

  • Instant Pot pressure cooker.
  • Measuring cups & spoons
  • Chef's knife
  • Silicon Spatula

Ingredients

  • 9 oz (255g) boneless, skinless chicken breast
  • 1 1/2 Cups low sodium chicken or vegetable broth
  • 1 tbsp tomato paste, no salt added preferred
  • 2 cups rotini pasta, dry
  • 1/8 cup oil-packed sun-dried tomatoes, sliced.
  • 1/2 tbsp olive oil
  • 3/4 tsp rosemary
  • 1/2 bell pepper, thinly sliced
  • 1/2 tsp garlic powder
  • 1 cup chopped baby spinach leaves
  • 1/8 cup Parmesan cheese, shredded

Preparation

  1. In the pot of an electric pressure cooker, whisk together the broth and tomato paste until the tomato paste is dissolved.
  2. Add pasta, sun-dried tomatoes, olive oil, rosemary, 1/4 teaspoon salt and several grinds of pepper. Stir to combine.
  3. Place the thinly sliced bell peppers on top of the pasta, do not stir.
  4. Season the chicken with the garlic seasoning and place on top of the pasta mixture and bell peppers, do not stir.
  5. Lock on the lid, select the Manual/Pressure Cook function. Adjust to high pressure and set timer for 4 minutes. Make sure the steam valve is in the “sealing” position.
  6. When the cooking time is up, carefully quick-release the pressure.
  7. When safe, unlock the lid and transfer the chicken to a clean cutting board. Quickly but safely slice the the chicken into bite-sized, return the chicken to the pot.
  8. Add the spinach and cheese, then stir to wilt the spinach and complete any remaining cooking of the chicken.
  9. Plate and serve.
