Turkey Loaf For One

This recipe is a slight adaptation from a cooking-for-one cook. The original recipe called for ground pork, but I prefer ground turkey, so I went with that.  The formula is also scaled up to produce two portions.

It's relatively easy and quick to cook but a bit spendy if you don't have a pantry stocked with rice vinegar, hoisin sauce, and panko crumbs.

Tomato, Bean, and Sausage Sauté

This is a pretty quick and easy sausage dish inspired by some of the sausage dishes that I have encountered on my travels through Japan.  I limited the ingredients to what I know is fairly easy to get at a moment's notice in most grocery US grocery stores.

Simple Microwave Lasagna

This is the recipe that lead to a chain events resulting in the removal of my gallbladder.  Wasn't directly the fault of the recipe, more the fault of my completely non-functional gallbladder freaking out.

Anyay, I've made a few variations of this recipe of the years. It's quick and easy, serves as a great base for building on with variations.  Generally I make it without any kind of meat addition but I bet it would the bomb with browned ground turkey or chicken.

Turkey and Rice Bowl or Street Tacos

It'd been a while since I've done any cooking for myself, which is not great since I do enjoy cooking. Monday night I whipped up a quick and dirty rice bowl topped with browned ground turkey cooked with soy and some other Stuff(tm).  It turned out pretty fantastic.


As presented, this recipe is scaled for a single serving which I scaled up for two servings so that I've some leftovers for the following day.  Since it was TacoTuesday I skipped the rice and instead served the ground and onion mix on Mission Sweet Hawaiian street taco tortillas garnished with some green onion and a few drops of sriracha sauce. (~460Kcal)


IMO, this worked WAY better as street tacos than as a rice bowl.

Chicken with Rotini, Sun Dried Tomatoes, and Bell Peppers (Instapot Version)

Quick to prepare meal that makes use of an Instant Pot pressure cooker. You could make this without the pressure cooker, tho, by baking the chicken in an oven and preparing the pasta on the stove. These instructions do not cover that preparation method.
